This sesame crusted seared ahi tuna served over soba noodles, mix of mushrooms, and Napa cabbage has many textures that blend so well together. The marinade brightens each ingredient to make your taste buds dance. Try it out for yourself!

Ahi Tuna with Soba Noodles and Veggies
Equipment
- 1 cast iron skillet
- 1 Medium pot
- 1 medium skillet
- Knife
- plate with raised edges, for tuna marinading
Ingredients
- 2 Ahi tuna steaks
- 2 bundles soba noodles
- 2 cups mix of preferred mushrooms chopped, I used oyster and enoki
- 2 cups napa cabbage, cut into small pieces
- cilantro, chopped
- green onions, sliced
- 1 tbsp olive oil
Sesame crust
- black sesame seeds
- white sesame seeds
- garlic powder
- black pepper
- dried onions
Marinade
- 6 tbsp low sodium soy sauce
- 4 tbsp rice wine vinegar
- 2 tbsp sesame oil
- 4 tsp agave
- 1 tsp ground ginger
Instructions
- Whisk together the marinade ingredients and add half to a flat dish with raised edges
- Pat tuna steaks dry and add to marinade for at least 30 min per side
- While the tuna is marinading, chop up the cabbage and mushrooms as needed and heat a large saute with a tablespoon of oil over medium high heat
- Saute mushroom and cabbage until tender adding half of the remaining half of the marinade while cooking (7-9 minutes). Set aside
- Cook the bundles of soba noodles according tot he package instructions. Once done, drain and rinse with cold water.Toss with sesame oil and set aside
- Mix sesame crust ingredients in a large flat plate (quantity will vary based on size of ahi tuna steaks and taste preference
- Once tuna is done marinading, remove from marinade and generously sprinkle all sides of the tuna with the same mix, pressing it down into the flesh
- Heat oil on a cast iron skillet over medium high heat until it gets very hot
- Once the skillet is hot, place tuna carefully onto the pan and sear for 45-60 seconds depending on the thickness of your tuna.
- The bottom should be turning a golden brown color and once it hits that, flip to do the same on the other side for another 60 seconds.
- Finish with a quick sear along the edges, about 20-30 seconds
- Place the seared tuna on a cutting board and slice up into pieces
- To assemble: Divide soba noodles into two bowls and top with cooked veggies, cilantro and green onions. Use the remaining 1/4 marinade sauce and divide between the two bowls. Give it a good toss to mix
- Add the seared tuna pieces on top and enjoy!
Notes
When searing the tuna, be sure to open some kitchen windows or turn the fan on high
