This is one of my husband’s favorite pasta dinners and it’s mine because of how easy it is to make! Sausage Rigatoni with Creamy Tomato Sauce and Green Peas is the perfect dinner for those busy days. Hearty meal to keep you happy and full!

Sausage Rigatoni with Creamy Tomato Sauce and Green Peas
Easy and delicious pasta that makes for a perfect make ahead meal for those busy weeks
Equipment
- 1 Medium pot
- 1 wooden mixing spoon
Ingredients
- 2 cups Rigatoni, uncooked
- 1 tbsp olive oil
- 1 lb Mild Italian Sausage, casing removed
- 1 15 oz Can crushed tomato sauce
- 1/2 bulb fennel, finely diced
- 1 small white onion, finely diced
- 1/3 cup heavy cream
- 1 cups green peas, defrosted if frozen
- salt
- grated parmesan, optional
Instructions
- Cook pasta according to the instructions on the package
- Heat olive oil in the saute pan with raised edges over medium high heat
- Add sausage and crumble while cooking until browned, approx 15 minutes
- Remove sausage from pan and place in a bowl. Set aside
- In the same pan, add the diced fennel and onion and cook until soft, about 5 minutes
- Add crushed tomato sauce and heavy cream. Mix well and bring to a slight boil
- Simmer sauce for 10 minutes
- Add salt and taste to adjust
- Add sausage, green peas and cooked pasta to the sauce and mix well
- Split into bowls and top with parmesan
- If you are not enjoying right away, let the pasta cool before placing in the fridge

- I love making this ahead of time for the busy weeknight dinners. I let the food come to room temp before placing into the fridge. You can reheat in a pan or microwave
