Amazingly Delicious Loaded Potato Slices

Loaded Potato Slices

The most delicious and easiest snack to make from a single potato

Equipment

  • 1 Baking Sheet
  • Parchment Paper
  • Mandoline Slicer
  • Oven Mitts

Ingredients
  

  • 1 large russet potato
  • 1/2 cup shredded cheddar
  • 5 slices cooked bacon, crumbled
  • 2 tsp garlic powder
  • 1 tbsp olive oil
  • salt and pepper
  • 1 stalk green onion, for garnish
  • sour cream, to serve

Instructions
 

  • Preheat oven to 400 degrees
  • Slice potato in 1/2 inch rounds and add to a mixing bowl
  • Drizzle with olive oil
  • Add salt, pepper, garlic powder and mix well
  • Place seasoned potato slices on a baking sheet lined with parchment paper
  • Bake for 30 minutes, flipping once halfway
  • Remove from oven and turn oven on to hi broil
  • Add cheese and bacon on each potato slice
  • Place back in oven to broil for 1 minute until cheese is bubbly (tip: watch closely as broiling temperatures can be tricky!)
  • Remove from oven and place slices on a large plate
  • Top with green onion slices and serve with a side of sour cream

Notes

  • Serving size – This can vary based on the size of your potato.  I have typically gotten 10 slices out of 1 large russet potato, which was devoured by me and my husband. 
  • Bacon – I buy center cut bacon slices and I cook them in the microwave. It’s quick, and always turns out crispy.  To microwave cook bacon, line a microwavable plate with two layers of paper towels.  Place bacon slices in one layer and top with another layer of paper towels.  General rule of time is 1 min per slice, but this can vary based on your microwave power settings.  I usually start with 3 minutes and continue with increments of 1 minute checking each time until it gets to the texture I want (I like my bacon extra crispy)
