Lobster Orzo Mac & Cheese – The French Laundry Copycat (Easier, Faster, Cheaper!)
Equipment
- 1 Medium pot
- Knife
Ingredients
- 1 tsp Better than Bouillon Lobster Base
- 2 cups heavy cream
- 1/2 cup uncooked orzo
- 2 tbsp chives, chopped
- 2 tbsp mascarpone
- 1 pack Luke's Lobster Meat 8 oz, defrosted
- salt
Instructions
- In the large saucepan, bring 1 cup of water to a boil
- Once boiling, stir in 1 tsp of Better than Bouillon Lobster Base until fully dissolved
- Add 2 cups of heavy cream
- Bring back to a boil and then reduce to a simmer
- Simmer the liquid until it has reduced to 1 cup, about 1 hour to 1 hour, 20 minutes
- While the sauce simmers, you can make the orzo by bringing 2 cups of lightly salted water to a boil in a pot
- Add the orzo and cook for 8-10 minutes until it reaches the doneness you like
- Drain and rinse under cold water. Set aside
- Bring lobster meat to room temperature and break into smaller bite size chunks
- Once the sauce has reduced to 1 cup, add the cooked orzo to the sauce and stir over low heat for about 1 minute. Season with salt to taste
- Add lobster meat, chives, and mascarpone. Stir until well blended. This mixture should resemble the thickness of risotto
- Continue to keep over low heat to warm up the lobster for a few minutes
- Serve hot and enjoy!
