Lobster Orzo Mac & Cheese - The French Laundry Copycat (Easier, Faster, Cheaper!)

This is a copycat version of Chef Thomas Keller's Butter Poached Lobster Mac and Cheese served at The French Laundry. My simplified version is easier, faster, and cheaper!

  • In the large saucepan, bring 1 cup of water to a boil
  • Once boiling, stir in 1 tsp of Better than Bouillon Lobster Base until fully dissolved
  • Add 2 cups of heavy cream
  • Bring back to a boil and then reduce to a simmer
  • Simmer the liquid until it has reduced to 1 cup, about 1 hour to 1 hour, 20 minutes
  • While the sauce simmers, you can make the orzo by bringing 2 cups of lightly salted water to a boil in a pot
  • Add the orzo and cook for 8-10 minutes until it reaches the doneness you like
  • Drain and rinse under cold water. Set aside
  • Bring lobster meat to room temperature and break into smaller bite size chunks
  • Once the sauce has reduced to 1 cup, add the cooked orzo to the sauce and stir over low heat for about 1 minute. Season with salt to taste
  • Add lobster meat, chives, and mascarpone. Stir until well blended. This mixture should resemble the thickness of risotto
  • Continue to keep over low heat to warm up the lobster for a few minutes
  • Serve hot and enjoy!

Notes

I love using Luke's Lobster Meat, but if it's not your preference or it's unavailable in your location, you can buy lobster tail and cook them in your preferred method. Will be equally delicious!
