Veggie Yaki Udon
I love udon and nothing better than a yaki udon packed with stir fried veggies
Equipment
- 1 wok or large skillet
- 1 Medium Saucepan
Ingredients
- 3 tbsp dark soy sauce
- 2 tbsp vegetarian oyster sauce
- 2 tbsp brown sugar
- 1 tsp rice wine vinegar
- 1 tbsp olive oil
- sesame oil
- 2 packs vacuum packed udon
- 1 medium zucchini, cut into half moons
- 1/2 white onion, sliced
- 8 oz shiitake mushrooms, sliced
- 1 bunch baby bok choy, bottom of the stem cut off
- 1 stalk green onions, sliced
Instructions
- Mix dark soy sauce, oyster sauce, brown sugar, and rice wine vinegar in a small bowl. Set aside
- Heat large pot of water to a boil
- Add udon for 1-2 minutes until it starts to fall apart (avoid overcooking). Use tongs to transfer to a large bowl. Drizzle with sesame oil and gently stir around the udon to combine. Set aside
- In a wok or large skillet, add olive oil and heat on medium high.
- Add bok choy, zucchini, onion and mushrooms. Saute until cooked through, about 10 minutes
- Add udon and sauce in the wok and stir to combine and saute for another few minutes
- Serve garnished with green onion slices
