Mix dark soy sauce, oyster sauce, brown sugar, and rice wine vinegar in a small bowl. Set aside
Heat large pot of water to a boil
Add udon for 1-2 minutes until it starts to fall apart (avoid overcooking). Use tongs to transfer to a large bowl. Drizzle with sesame oil and gently stir around the udon to combine. Set aside
In a wok or large skillet, add olive oil and heat on medium high.
Add bok choy, zucchini, onion and mushrooms. Saute until cooked through, about 10 minutes
Add udon and sauce in the wok and stir to combine and saute for another few minutes
Serve garnished with green onion slices
