This Uni Dynamite Rice is a copycat version of the one served at Chef Roy Choi’s Best Friend Las Vegas. It’s surprisingly quick and easy, so it will be no time at all before your cravings are satisfied. If you love uni (sea urchin) as much as I do, this is a must try!

Notes
- Adjust sriracha depending on heat preference level
- The amount of toppings can be adjusted on personal preference
- I prefer to Ensui Uni, but the ones that come in trays like this also work. Santa Barbara Uni prime season is from Nov-Feb.
- The brand of roasted seaweed I used was Haio premium roasted seaweed
