Uni Dynamite Rice - Best Friend Vegas Copycat Recipe

This is a copycat recipe of the Uni Dynamite Rice served at Best Friend Las Vegas. Creamy, spicy and full of flavor!

Rice

  • Cook rice in a rice cooker with 1 1/4 cup water
  • Season cooked rice with black vinegar, soy sauce, and sesame oil
  • Split rice evenly between mini frying pans

Sauce

  • In a bowl, add kewpie mayo, sriracha and yuzu and mix until well blended
  • Spread evenly over rice

Cook

  • Turn oven on hi broil and place mini frying pans in oven for 3-5 minutes or until the top is bubbly
  • Remove from oven and let cool for 5 min

Assemble

  • Top each pan with a layer on sea urchin (uni)
  • Sprinkle the flying fish roe (tobiko), green onions, sesame seeds, and seaweed split between the two pans

Serve

  • Serve immediately and enjoy! This can be eated right from the pan or served with a side of Roasted Seaweed as a wrap

Notes

  • Adjust sriracha depending on heat preference level
  • The amount of toppings can be adjusted on personal preference
  • I prefer to Ensui Uni, but the ones that come in trays like this also work.  Santa Barbara Uni prime season is from Nov-Feb.  
  • The brand of roasted seaweed I used was Haio premium roasted seaweed
