Low Carb Cauliflower Parm

One of the hearty favorites turned vegetarian and low carb

Equipment

  • Knife
  • Baking Sheet

Ingredients
  

  • 1 head cauliflower, cut into 1" steaks
  • 1/2 cup mozzarella, shredded
  • 1/4 cup parmesan, grated
  • 1 cup marinara
  • olive oil
  • salt and pepper
  • parsley or basil for garnish

Instructions
 

  • Preheat oven to 425 degrees Farenheit
  • Put cauliflower steaks on a lined baking sheet
  • Drizzle oil and add salt and pepper
  • Place in preheated oven for 30-35 minutes until fork tender flipping once halfway
  • Once done, remove from oven
  • Turn oven to hi broil
  • Spoon marinara on each cauliflower steak and top with mozzarella and parmesan
  • Place pan back into the oven for 3-5 minutes or until golden brown and crisp
  • Serve garnished with parsley, basil or red pepper flakes

Notes

  • Serve with a side of green beans or some other veggie dish to keep it a low carb meal
  • If not low carb, you can serve with some rice or pasta
